The harvest was performed by hand seeking to obtain a proper fruit maturity. Skin contact was carried out at 10°C for an average of 24 hours, while 7% of the grapes had fermentation maceration on skins. Fermented in a stainless-steel tank at 17-18°C.

Tasting Note & Food Pairing

Bright platinum colour. Aromas of citrus and white-fleshed fruit with herbal and chalky notes. The mouthfeel is rich and crispy with a salty freshness and a mineral aftertaste.

Pair with pork with celery, fish and shellfish. Serve at 10 °C -12°C.

Culture

Voila vineyard is in close proximity to Handras in Siteia, east Crete, near to a medieval settlement of the same name. In spite of its dereliction, Voila settlement preserves the aura of its Venetian and Ottoman past. Ruins of towers, churches and houses resiliently still stand. The ancestors of Greece’s national poet, Dionysios Solomos are believed to be buried under Saint George’s church. Once visitors quench their thirst for history, they can tour a little further as far as Ziros and Mesa Apidi, where colourful water lilies in small ponds complete the picturesque scenery.
