The 30-year-old bush vines in Pirovolikes vineyard give us grapes with significant high natural acidity and aromatic concentration that is extracted by a skin contact of 16 hours. The must is fermented in stainless steel for 15 days in 19oC. The wine matured in 500lt, 400lt and 225lt, new and re-used French, Acacia and Caucasian oak for 5 months.

Tasting Note & Food Pairing

Pale yellow colour. Citrus fruit and mineral aromatics on the nose, along with some herbal notes and a touch of spice and cedar from the oak. Full mouthfeel with crispy acidity, marked by a long fruity and lightly creamy finish. Mineral-slatey aromatics on the nose, along with some wet earth, notes of saline and Mediterranean spray full of orange blossom and herbs with nice spice from the oak.

Pair with fish and seafood, as well as meat with white sauces or greens like goat with spiny chicory or hare with vineshoots. Serve at 10-12°C.

Culture

The "Pirovolikes" vineyard is located between the villages of Panorama and Amourgelles, in the municipality of Minoa Pediados, Heraklion Prefecture. Despite its mountainous character, the area is particularly fertile, with extensive cultivation of horticultural crops, vines and olive trees. The Amourgelles Dam, which was built a few years ago, has considerably contributed to this.

Apart from the Dam which has evolved into an important wetland, visitors may also explore the area’s past that goes back to the Byzantine times. The ruined Byzantine settlement of Kamares is worth a visit and so are the churches in Amourgelles village that have been preserved since the Venetian rule.
