The grapes were harvested during the first week of September. They were macerated almost uncrushed for 12 hours. The free run juice was led into new and 3 -year-old French oak barrels. The spontaneous alcoholic and malolactic fermentation lasted approximately 1,5 months and the wine remained in oak for 3 more months.

Tasting Note & Food Pairing

Pale yellow colour. The typical aromatics of Vidiano are really dominant in the nose, which displays a great expression of the variety, with stylish ripe apricot and peach, pineapple compote, hints of honeydew melon and a touch of nuttiness. The palate is extremely rich, full-flavoured of creamy stone fruit with hints of spice, a viscous mouthfeel and long aromatic aftertaste.

Pair with all sea food especially fatty fish, a large variety of cheese and meat with cream sauces.

Culture

The rural area named “Ippodromos”, meaning horse racetrack in Greek, is located within the administrative boundaries of Panorama village, part of Municipality of Minoa Pediados, Heraklion Prefecture.

An area of great archaeological interest not yet fully explored, it abounds in monuments of the Venetian period. In recent times, it was inhabited by refugees from Asia Minor who, thanks to their industriousness and knowledge in vine cultivation, turned the area’s fertile land into a heaven for viticulture.
