The very promising Cretan variety Vidiano brings out its characteristics exceptionally well in the "Ippodromos" vineyard at an altitude of 610m, on rocky clay soil. A creamy and round organic wine, with intense stone fruit aromas and spicy notes. Rich and viscous mouth with an extremely long after-taste.

Winemaking

The grapes were harvested during the first week of September. They were macerated almost uncrushed for 6 hours. The free-run juice was transferred to stainless steel tanks and, midway through fermentation, it was racked into new 600-liter and 2-year-old Austrian oak barrels. The spontaneous alcoholic and malolactic fermentation lasted approximately 2 months. The wine remained in oak for an additional 4 months and had a natural stabilization (no fining and no cold treatment).

Tasting Note & Food Pairing

Pale yellow colour. Nose with dominant all the aromatics of Vidiano: ripe apricot and peach, but also mango, pineapple compote, hints of candied coconut and mastic and a touch of sweet spicy notes. The palate is rich and full-flavoured with creamy stone fruit, balanced by crisp acidity, a viscous mouthfeel, and a long aromatic aftertaste.

Pair with all sea food and fatty fish, a wide variety of cheese and meat in creamy sauces. Serve at 10-12°C.
