Plyto Psarades 2021

Single Area

White Dry Wine

The Plytó grape variety was saved from extinction by the Lyrarakis family, when it was planted in the "Psarades" family vineyard at 480m altitude in central Crete in the early '90s. An elegant wine, with clean fruity aromas of high intensity, a full and versatile mouthfeel, and a noble tannic style that balances its taste.

Timing the harvest is the most important decision for the winemaker. This year we achieved to make 2 harvests in the vineyard, based and focused on the average organoleptic characteristics perceived in 2 different stages of the grape's maturation. For the winemaking we followed the principles of classic white fermentation. Alcoholic fermentation was achieved by using selected yeast from a complete organic habitat (Bio Certificate). Only yeast derivatives were applied for the stability and natural fining of the wine.
