Timing the harvest is the most important decision for the winemaker we constantly taste the fruit and wait for a balance of sugar, acid and tannins to be reached. Once picked, the fruit was destemmed and slightly crushed. After a 24h skin contact at 14.5°C, the free run juice was lead into inox tanks for the alcoholic fermentation. Only yeast derivatives were applied for the stability and natural fining of the wine.
